I am a stay at home mommy to my daughter (3) and son (1) and wife to my husband of five years. I was a school librarian before we had our littles, but I stopped working outside the home when Little Miss was born. I am now in the process of becoming a certified Dr. Sears Health Coach. We live in NC with our two small, crazy dogs.
We decided to make the change to eating a vegan diet around the end of 2014, and we really made the leap last January. We want our children to have healthy, balanced, fun diets, and my daughter loves to grocery shop and cook with my husband and I, and she is far more likely to try new foods if she helps prepare them. When I started looking for vegan cookbooks for kids, I had trouble finding what I was looking for, so I set out to adapt omni and vegetarian recipes for my little sous chef and find ways for her to participate in the cooking of our new favorite vegan recipes. I never want her to feel ashamed of eating a vegan diet or to feel like she is missing out, so I want our family to eat fun, interesting, healthy meals and snacks.
You don’t have to be a vegan to enjoy the food we eat! Many families face the challenge of feeding picky eaters, children with food allergies, or coming up with new ways to introduce healthy foods.
